Fluffy, High Protein Mug Cake for One

Even in a calorie deficit, I tend to be the kind of person that likes to have some sort of dessert every night. I’m also always looking for some high protein options and this mug cake happens to hit both the sweet tooth and the protein needs! Perfect, if you ask me!

This recipe does not taste like it’s good for you either! Perfect for those nights you might be craving something sweet, but don’t want to break the macro bank. It’s cakey, fluffy and you cannot taste the protein whatsoever.

High Protein Chocolate Mug Cake

Ingredients  

Dry Ingredients

  • 1 scoop chocolate protein powder (I like I Heart Macros best)
  • 10 g unflavored collagen powder (I use Orgain Collagen Peptides; 1 scoop)
  • 1 tbsp Hershey's Special Dark cocoa powder
  • 1/2 tsp baking powder
  • 4 g sugar free pudding mix (Use chocolate for best results)
  • 1 packet Stevia

Wet Ingredients

  • 1/3 cup whole milk (Or milk of choice)

Optional Toppings

  • 1 tbsp sugar free chocolate chips
  • 2 tbsp lite cool whip

Instructions 

Make the mug cake

  • In a medium-sized, microwave safe bowl, combine all dry ingredients and mix until well combined.
  • Add the milk to the dry ingredients and mix well (about 45 sec), making sure there are no clumps or remaining dry mix.
  • Place bowl in the microwave and heat for 50-60 seconds. The mug cake will rise and expand. Be sure to watch it, as there is the potential that it may overflow. If this starts to happen, take it out, stir and return bowl to the microwave to finish heating.

Add the toppings

  • Top with the chocolate chips and cool whip, or toppings of choice!

Swaps and substitutions

You can use different flavors of protein powder and pudding mixes to change up the flavor! I love this with vanilla protein/pudding mix as well.

If you don’t want to use collagen (or don’t have it on hand) you can make the recipe without it. There is no need to change the liquid amount either. Just simply omit the collagen powder.
