The Perfect Healthy, Sweet Treat
Happy New Year! I hope you had a wonderful holiday season, whatever that might look like for you and your family!
I know we all likely indulged in some delicious treats and foods over the past few weeks. But we don’t restrict treats over here, so I’m still sharing one as my first recipe in 2022. My personal approach to nutrition is to allow myself to eat what I’m craving most of the time. If I can make a healthier option, then that’s even better! Enter salted chocolate almond butter dates!! Umm… YUM.
This sweet treat will leave you satisfied, but also provides a healthier option with lots of nutrients! The perfect combination, if you ask me.
These are also probably one of the easiest treats to make as well! You will only need four ingredients for these, and they take a couple minutes to throw together.
Here's what you'll need:
- 4 large, pitted Medjool dates
- 8 tsp almond butter of choice (Barney Butter is my favorite brand)
- 1/4 cup semi-sweet chocolate chips (dark chocolate would also be great)
- Pinch of sea salt
HOw to make them:
- Line a small baking sheet or plate with parchment paper.
- Using a butter knife, cut a slice along the long side of each date. You don’t want to cut all the way through, as you’ll want to keep them in one piece. This will be where the almond butter goes.
- Stuff each date with about 2 tsp of almond butter (could also use peanut butter if that’s your preference). If you want more, go for it!
- Meanwhile, in a microwave safe bowl, melt chocolate chips, heating at 30 second intervals. Be careful not to over-heat (mine only took 1 minute total).
- Cover each stuffed date in the melted chocolate, ensuring to get all sides thoroughly coated.
- Place your chocolate covered dates on the lined baking sheet.
- Once all dates are coated with the chocolate, sprinkle the tops with a pinch of sea salt.
- Place in the freezer for about 6-10 minutes, or until chocolate is hardened.
