Ground Turkey Zucchini Bake
Hope you have had the best week ever! I’m definitely looking forward to relaxing and unwinding from a long, but very productive and successful week. One thing that I love doing to help me over the course of the week is to have some really delicious meals pre-prepped for me. So, I wanted to share a favorite recipe of mine that I have been making non-stop lately.
This is sorta like a lower carb lasagna. I called it a ‘bake’ because it doesn’t have the same ingredients as lasagna, like the ricotta cheese or lasagna noodles. I wanted something that tasted like comfort food, but was a healthier option, and this hits the nail on the head. If you like lasagna though, you will love this one!
Plus- best part of all is that it’s pretty simple to put together! Who doesn’t love that?!
Here’s what you’ll need:
- 2-3 medium zucchini (in thinly sliced coins, I only used one because this came from our garden and was huge)
- 3 medium tomatoes (thinly sliced)
- 1 tbsp olive oil
- 3 cloves garlic
- 2 lbs ground turkey (I have also made with only 1 lb as well)
- 1 can (24 oz) pasta sauce (I used tomato basil flavor)
- 1 tbsp Italian breadcrumbs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 bag (8 oz) mozzarella cheese
Other items:
- 9×13 pan
- Cooking spray
- Mandoline slicer (not necessary, but that’s what I use to slice the zucchini)
- Large skillet
How to make it:
- Preheat the oven to 425º F.
- Spray a 9×13 pan with cooking spray and set aside.
- Slice zucchini into thin coins. I used a mandoline slicer, but you can also do this with just a kitchen knife (your slices will just be a bit thicker, which is perfectly fine).
- Slice the tomatoes into thin slices as well with your kitchen knife. Set both the zucchini and tomatoes aside for now.
- Heat a large skillet over medium heat. Add the garlic and olive oil and brown.
- Add the ground turkey and continue to cook over medium heat until browned.
- Once the turkey is browned, add the full can of pasta sauce, breadcrumbs, salt and pepper and stir to combine.
- Remove the meat sauce from heat and set aside.
- In your greased pan, begin layering the contents:
- 1-2 layers of zucchini coins (depending on the thickness, mine were very thin so I did 2 layers)
- 1/2 the meat sauce
- 1 layer of sliced tomatoes
- 1/2 the mozzarella cheese
- Repeat the layers one more time.
- Bake at 425º F for 30-35 minutes, or until the top is crispy and brown.
This recipe will store in the fridge for about one week. Recipe makes about 8 servings total and is perfect served with a salad or some roasted asparagus and garlic bread.
