Easy, Delicious Chocolate Banana Protein Muffins

Happy Sunday! Hope you’re having a relaxing day and getting prepped for the week ahead. I’m spending today meal prepping a few of my favorite quick recipes and wanted to share these delicious chocolate banana protein muffins! This recipe is pretty easy and perfect for your overripe bananas. I can also guarantee that it is husband approved (which means they must be good).

Ingredients:

  • 3 medium overripe bananas, mashed
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 3/4 cup almond flour (could also use regular flour or oat flour, but I love the flavor from almond)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2-4 tsp cocoa powder (depending on how chocolatey you prefer, I always do 4)
  • 2 scoops chocolate protein powder (I prefer 1st Phorm Milk Chocolate)
  • 1/4 cup chocolate chips
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a muffin tin and set aside. I love using a silicone muffin tin for these.
  3. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cocoa powder and protein powder in a medium bowl and set aside.
  4. In the bowl of a stand mixer, mash bananas, then add remaining wet ingredients (eggs, honey, vanilla) and mix on medium speed until well combined.
  5. Slowly add the dry ingredients to wet and mix on medium speed until just combined.
  6. Bake at 350 degrees for 20 minutes. That’s it! Super quick and easy!
