Easy, Delicious Chocolate Banana Protein Muffins
Happy Sunday! Hope you’re having a relaxing day and getting prepped for the week ahead. I’m spending today meal prepping a few of my favorite quick recipes and wanted to share these delicious chocolate banana protein muffins! This recipe is pretty easy and perfect for your overripe bananas. I can also guarantee that it is husband approved (which means they must be good).
Ingredients:
- 3 medium overripe bananas, mashed
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp honey
- 3/4 cup almond flour (could also use regular flour or oat flour, but I love the flavor from almond)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 2-4 tsp cocoa powder (depending on how chocolatey you prefer, I always do 4)
- 2 scoops chocolate protein powder (I prefer 1st Phorm Milk Chocolate)
- 1/4 cup chocolate chips
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a muffin tin and set aside. I love using a silicone muffin tin for these.
- Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cocoa powder and protein powder in a medium bowl and set aside.
- In the bowl of a stand mixer, mash bananas, then add remaining wet ingredients (eggs, honey, vanilla) and mix on medium speed until well combined.
- Slowly add the dry ingredients to wet and mix on medium speed until just combined.
- Bake at 350 degrees for 20 minutes. That’s it! Super quick and easy!
