Crockpot Ground Beef and Italian Sausage Soup
If you need an easy crockpot recipe or something to warm you up- this recipe is perfect! We’ve been loving crockpot recipes lately. Just throw everything in and don’t think about it until you’re ready for dinner. The best kind of recipe if you ask me 🙂
For this recipe I actually used two kinds of meat (mostly to increase the protein intake, but it also made the flavor amazing). If you want, you could easily switch out the protein source (ground turkey instead of ground beef, or use only one source of protein). I haven’t tried it that way, but think it would turn out just as great.
Main Ingredients:
- 2 cups low sodium chicken broth
- 1 lb ground beef (I prefer grass-fed 85%- just love the taste)
- 1 lb mild Italian sausage
- 1 medium yellow onion, diced
- 3 cups celery, chopped
- 4 cloves garlic, minced
- 2 green bell peppers, diced
- 1 can crushed tomatoes (28 oz)
- 1 can diced, peeled tomatoes (14.5 oz)
- 1 TBSP chili seasoning (I used a Trader Joe’s pre-made chili spice, but as most people won’t have that, you can make the one I have at the end of this recipe)
Toppings:
- Salt and pepper to taste
- Pinch of cilantro
- 1-2 TBSP shredded mozzarella cheese
- Pour chicken broth into crockpot.
- Add the ground beef and Italian sausage. I suggest separating and breaking up the meat a little so that it cooks easier.
- Add onion, celery, garlic, bell pepper, crushed tomatoes, diced tomatoes, and the chili seasoning.
- Heat on high for 6 hours.
- Stir soup before serving and ensure the meat is thoroughly cooked. You may need to break it up a little more.
- Top with salt/pepper to taste, shredded cheese and cilantro. It also tastes great with a little avocado or some sour cream/Greek yogurt.
This soup is a higher fat (due to the ground beef and Italian sausage), but is lower carb. I paired mine with a cornbread muffin (we love the Kodiak Cakes box recipe). This was the perfect comfort food, especially with the cold weather lately.
