4 Ingredient Marble Cake Mix Cookies

With Valentine’s Day coming up this weekend, I have been testing some new recipes. I can never decide if I like chocolate or white cake better, and when making these cookies I decided not to choose. These are the easiest cookies ever- you only need 4 ingredients (technically 5 if you count each box of cake mix, I guess). Either way, super easy and taste delicious. 

I chose to make these with a dark chocolate fudge cake mix and a classic white cake mix. Both were options I had in my pantry already, so that made it extra convenient. 

If you have a different flavor of cake mix, you can simply modify the recipe, and obviously you won’t have a marble look if only using one flavor of cake mix. But really, this will work with any flavor mix that you have.

Quick little story about Nick and I’s first Valentine’s Day date together- We had been dating only maybe like 2 months or so by then. I was living with my parents in Loveland, he was living in an apartment near University of Cincinnati (where we both went to college). I drove to his apartment so we could go out that night and the roads were horrible because it was snowing really badly. I made it there safe and we had plans to go to a movie, then dinner afterward.

On the way to the movie, multiple different cars driving in front of us got stuck in the snow. The spot were we driving on was a little bit of a hill, and Nick, being a gentleman, offered to get out and help one of the girls push her car up and to the shoulder while I drove his car to a safer spot. The girl got out of her car to thank him, then realized she had locked herself out so had to call the police. We ended up missing our movie because all of that took about 30-40 minutes. Instead we walked around Barnes & Noble and talked about what movies and books we liked. It probably turned out that way for the best. It’s been one of my very favorite dates because we were able to talk so much and I felt like I got to know so much about him that night.

When we got to our dinner, we were at first annoyed because they put us at a table squished between two other couples. I kid you not, the couple to our left broke up during our dinner (on Valentine’s Day). The couple on our right was awkwardly making out the entire time. Both situations were super awkward. And we were only inches away from each couple, so everyone could hear each other’s conversations perfectly. Actually, if you’ve seen the movie Valentine’s Day where Anne Hathaway’s character has dinner with her boyfriend, it was basically exactly like that. SO uncomfortable. Eventually both couples left and we ended up with the entire restaurant to ourselves. So I guess it all worked out!

This was the first of many interesting dates/trips we’ve had. If you know us well, you would know how insane some of our vacation catastrophes are. But, I guess that’s what makes it all so memorable and we have some good stories to tell. I’m sure I’ll share some of those eventually too.

Alright, enough about me, back to what you’re actually here for! The cookies 🙂

You will need:

  • 1 chocolate cake mix
  • 1 white (or vanilla) cake mix
  • 1 cup vegetable oil (separated into 1/2 cup portions)
  • 4 eggs
  • 1 bag white chocolate chips
  • two mixing bowls (or stand mixer)

 

How to make these:

  1. Preheat your oven to 350º F. Line a baking sheet with parchment
    paper or foil (I never have parchment on hand so I use foil and then
    just spray with cooking spray).
  2. For the chocolate dough:
    1.  Combine the chocolate cake mix, 1/2
      cup of the vegetable oil and 2 eggs in a mixer until smooth (you could
      probably do this by hand as well). This dough will be somewhat of a
      play-dough consistency when combined.
  3. For the white dough:
    1.  Combine the white cake mix, 1/2 cup of the vegetable oil and 2 eggs
      in a mixer until smooth. Once combined, add the full bag of white
      chocolate chips and stir to combine.
  4. Fold the chocolate and white cookie dough together slowly. You don’t want to over mix if you’re going for that marbled look.
  5. Once you have the amount of marbling you prefer, scoop the dough out
    using a cookie scoop (or about 2 TBSP per cookie), onto your greased
    baking sheet.
  6. Bake at 350º F for about 10 minutes (will vary based on your oven).

Mine made about 36-ish cookies, but that will depend on how large of a scoop you use. I currently have the rest of them packaged up into packs of two and placed in my freezer for whenever I feel like I want some! I actually do that with most baked goods, that way I don’t feel the need to eat them all before they go bad, and I can spread out when I choose to eat one. Perfect for those days you just HAVE to have something chocolate.
